Pulled pork sandwiches make super easy camping meals
This is one of our family favorites! Everyone loves these pulled pork sandwiches and can’t seem to get enough. On top of that, they are really easy to make, and your crockpot will do most of the work while you’re otherwise engaged. Furthermore, these are perfect if you’re looking for easy camping meals to feed a lot of people.
Process
You’ll want a 3–4-pound Boston Butt Pork Roast for the right texture and taste. Add 1/2 cup of water to your crockpot. Before placing your roast in the crockpot, you’ll want to rub it down with salt and pepper. Cook your roast on high for 6-7 hours.
Once the cooking time is up and your roast is done, remove it from the crockpot and shred the entire thing with a fork. You’ll mix the shredded pork roast with BBQ sauce and place it in the refrigerator.
PRO TIP! Making your own sauce will yield the best results. I will share the recipe we use below.
2 cups of ketchup
2 Tablespoons of honey
1 1/2 cups of brown sugar
You’ll also want to add a little garlic salt and onion powder. 1/2 to 3/4 teaspoon of each should suffice. I suggest adding a little at a time until you get the sauce to taste like you want.

Packing & Campsite Warming
You can transport your pulled pork by placing it in environmentally friendly zip top bags and carefully placing those bags in your cooler. If you are primitive camping, you can warm your pulled pork in a foil pack over your campfire. If you are camping in your RV, you can warm it in your microwave.
PRO TIP! When you go to reheat your pulled pork, you can add a “little bit” of apple juice to keep it from drying out while it’s reheating.
Instant Ramen noodle cups make super easy camping meals
These are so convenient, super thrifty, and kid friendly! Making them at camp is so easy, and the directions are clearly marked on the noodle cup! All you need is some boiling water and 3 minutes.
Broccoli and cauliflower salad
This is so good, quite healthy, and capable of feeding a lot of people! It makes for easy camping meals because all you have to do at camp is serve and enjoy. Furthermore, it makes a perfect lunch for those hot summer days!
You’ll need to gather a few things, and it takes a little time to chop up the ingredients. Below is a list of what you’ll need.
Supplies!
- Large mixing bowl
- Small mixing bowl
- Cutting board
- Knife for chopping
- Large spoon for mixing
- A whisk
- Measuring spoons
- Measuring cups
- Microwave bacon cooker
- Small bowl (for crumbled up bacon)
Salad!
- 8-12 slices of bacon (whatever kind you like best)
- 1 cup of rotisserie chicken (add more if you wish)
- Head of broccoli
- Head of cauliflower
- Vidalia onion (amount depends on personal preference)
- 1 cup of mild cheddar cheese
- 1/4-1/2 cup of shelled sunflower seeds (optional)
Dressing!
- 1 cup of mayonnaise (use light if you want to make it healthier)
- 1/8-1/4 cup of milk (depending on how thick or thin you want your dressing to be)
- 2 tablespoons of vinegar (any kind really)
- 3-4 tablespoon of sugar (actual amount depends on personal preference)
Process
Cook your bacon in the microwave, let it cool, and crumble it up. You’ll set it aside for now.
Clean and chop your broccoli, cauliflower, and onion(s). Add those to the large bowl.
Cut up your rotisserie chicken and add it to the large bowl. Cut your mild cheddar cheese into small cubes and add it to the bowl. Then, go ahead and add your bacon. If you’re adding sunflower seeds, do that now.
At this point it’s time to put all the ingredients for the dressing in the small bowl and mix them well. You can taste the dressing before adding it to the dish, just in case you need to make adjustments. Perhaps you want to add some black pepper or something.
Once you have the dressing like you want, it’s time to add it to the large bowl. Stir it well and refrigerate.
PRO TIP! If you want to save some time, you can just buy a precooked rotisserie chicken from your local grocery store. Also, you can shave a little more time off the process by purchasing premade coleslaw sauce and using it as the dressing. It’s good that way too!
Spam salad makes super easy camping meals
Have you ever had Spam salad? If not, you should give it a try. It makes easy camping meals for lunches, and it’s packed with protein. Below is a list of what you’ll need!
Supplies!
- Cheese grater
- Medium-Large mixing bowl
- One mixing spoon
- A couple smaller spoons (for mayonnaise and relish)
- Measuring cups
- A small cooking pot
- Cutting board
- A knife (for chopping up boiled eggs)
Salad!
- 1 can of Spam
- 3-4 hard boiled eggs
- 1/2 a cup of mayonnaise (adjust up or down depending on your preference)
- 2 tablespoons of sweet relish (OR substitute Amish Chow-Chow)
PRO TIPS! There are different kinds of Spam you can buy. They have lite Spam, low sodium Spam, etcetera. So, choose the type of Spam you need based on your own personal dietary needs. If you want Spam salad with a twist, use Amish Chow-Chow in place of the sweet relish.
Process
Boil your eggs, peel them, and chop them up. Set them aside.
Shred your spam using the largest side of a cheese grater.
In a medium to large bowl, combine the following ingredients: shredded Spam, boiled eggs, mayonnaise, and sweet relish. Mix well and refrigerate.
At camp! You can serve this with various different crackers or make sandwiches.
Chicken and bacon pasta salad
This is so good and there are a couple variations you can make. It makes for easy camping meals because all you have to do at camp is serve and enjoy. Below is a list of what you’ll need!
Supplies!
- Large mixing bowl
- Mixing spoon
- Measuring cups
- Measuring spoons
- Cutting board
- Knife
- Cooking pot (for pasta)
- Colander
- Microwave bacon cooker
- Small bowl
- A whisk
Salad!
- 1 pound box of garden rotini (or any pasta of your choosing)
- 1 cup of rotisserie chicken
- 1/2 a pound to a pound of regular or turkey bacon (depends on how much bacon you like)
- 1 Vidalia onion
- 1 cup of shredded parmesan cheese
Dressing!
- 1 cup of mayonnaise (use light if you want to make it healthier)
- 1/8-1/4 cup of milk (depending on how thick or thin you want your dressing to be)
- 2 tablespoons of vinegar (any kind really)
- 3-4 tablespoon of sugar (actual amount depends on personal preference)
Process
You’ll probably want to cook your bacon in the microwave so it’s less greasy. Simultaneously, cook your pasta on the stove according to package instructions.
When your bacon is done, simply cool it and break it up in a small bowl. Set it aside.
Once your pasta is done, you’ll rinse it with cold water and drain it well.
Dump your pasta in a large bowl. Then, add the following ingredients: chicken, bacon, onion, and cheese. Stir those ingredients together and set that aside while you prepare your dressing.
In a small mixing bowl, whisk together all the ingredients for your dressing.
Once you have the dressing like you want, it’s time to add it to the large bowl. Stir it well and refrigerate.
VARIATION! If you don’t want the dressing above, you can omit the sugar and vinegar and add a dry ranch seasoning packet. It’s good like that too!
DIY Lunchables make super easy camping meals
These are a great idea if you’re camping with children! They’re also super thrifty because you can make a lot of Lunchables if you buy ingredients in bulk.
Furthermore, there are a ton of variations when it comes to making Lunchables, so you’ll be able to please all the picky eaters in your camping party. Below are few ideas!
Suggestion 1: Honey ham, mild cheddar cheese, round snack crackers, and apple slices.
Suggestion 2: Smoked turkey, Swiss cheese, club crackers, and sliced banana.
Suggestion 3: Salami, provolone cheese, wheat crackers, and baby dill pickles.
You can chop your meat and cheese into cracker size squares at home. Put them in environmentally safe zip top bags and place them in your cooler. As far as your fresh fruits, I suggest waiting until you’re at camp. I usually just serve my Lunchables on paper plates.
Cream cheese pinwheels
These make super easy camping meals that you can eat cold on a hot summer day! You can make cream cheese pinwheels a variety of different ways. Below are a couple suggestions!
Suggestion 1: BLT Pinwheels (with Vidalia onions)
Microwave your bacon, crumble it up, and let it cool.
Mix a block of low-fat cream cheese with half a cup of light mayonnaise.
Lay your flour tortilla on a flat surface. Spread the cream cheese & mayonnaise mixture on it. Top with bacon, finely shredded lettuce, finely diced tomato, finely diced Vidalia onion, and whatever else you want on your pinwheel. Roll the flour tortilla up and cut across the roll width wise.
Suggestion 2: Turkey and Swiss Pinwheels

Turkey and Swiss wraps make super easy camping meals
These are definitely one of our “go to” lunches when camping or traveling in general. They make easy camping meals that are refreshing, filling, and convenient. Below is what you’ll need!
- Flour tortillas (choose your size)
- Smoked turkey
- Swiss cheese
- Lettuce
- Tomato
- Your choice of dressing (honey mustard or ranch)
Lay out your tortilla and layer as follows: sliced turkey, shredded Swiss cheese, finely shredded lettuce, diced tomato, and dressing. Roll up your tortilla wrap, place in an environmentally friendly zip top bag, and refrigerate.
Potato salad loaded with bacon
This is one of those easy camping meals that can feed a lot of people at a thrifty price. It’s also really good on a hot summer day! Below is a list of what you’ll need.
Supplies!
- 1 large cooking pot
- 1 medium cooking pot (or rapid egg cooker)
- Table knife (for scraping the peeling from the potatoes when they are done boiling)
- Cutting board
- Knives (for chopping hard boiled eggs, peeling potatoes, & dicing onions)
- Large bowl
- Large mixing spoon
- Measuring spoons
- Microwave bacon cooker
- Small bowl (for crumbled bacon)
Salad!
- 10 medium potatoes
- 6-8 hard boiled eggs (chopped)
- 12 slices of bacon (crumbled)
- 1/2 cup Vidalia onions (diced)
- 2 heaping tablespoons sweet relish
- Mayonnaise (until creamy)
- 2 tablespoons of mustard (add more if you like a bite to it)
Process
Boil the potatoes until you can gently stick a fork in them. While the potatoes are cooking, boil the eggs and put your bacon in the microwave.
When your potatoes are done, peel them with a table knife. The skin will scrape off easily. Then, chop the potatoes into cubes and put them in the large bowl.
Next, peel the eggs and chop those. Add them to the large bowl.
Crumble the bacon and toss that in the large bowl.
Peel and dice your onion. Add about 1/2 a cup or so to the large bowl.
Add the sweet relish and mustard. Then, slowly add mayonnaise until the potato salad is creamy enough. Cover and refrigerate.
Sub sandwiches make super easy camping meals
Homemade subs are so good, and they travel well. You can make them a variety of ways, so you’ll be able to please all the picky eaters in your camping party. Below are a couple suggestions on premade subs you can make for easy camping meals.
Suggestion 1: Meat and Cheese
You can either buy the sub rolls to make your sandwiches on or a loaf of French bread. Choose your favorite meats, cheeses, and sauces. Assemble your sub, wrap it in plastic wrap, place it in a zip top bag, and refrigerate.
Suggestion 2: Turkey and Bacon
Open your sub roll or French bread. Layer as follows: Mayonnaise, turkey, bacon, lettuce, tomato, Vidalia onion, and anything else you would like on it. Then, you’ll wrap it in plastic wrap, place it in a zip top bag, and refrigerate.
Suggestion 3: Pizza Sub
Open your sub roll or French bread. Layer as follows: pizza or marinara sauce, mozzarella cheese, Canadian bacon, pepperoni, mozzarella cheese, red onions, black olives, bell pepper and anything else you would like on it. You’ll wrap it in plastic wrap, place it in a zip top bag, and refrigerate.

Sounds like a fantastic idea! These easy camping meals seem like they’re all about maximizing the fun and minimizing the hassle. I love the simplicity of the Boston Butt Pork Roast recipe – just toss it in the crockpot with some seasoning, let it cook, then shred it up and mix with BBQ sauce.
